I made some lovely oxtail soup/stew with onions and celery when the
weather got cold. The stock from ox tails (which are merely beef tails)
are rather fatty, so the stock is nice and gelatinous. Brown them, then
cook in a pot covered with water. Add a couple of dried bay leaves, salt
& pepper. Cook about 2 hours. Chill, then skim solidified fat before you
add the diced vegetables. Add more water. Season to taste with dried
thyme. I added barley to this rendition of oxtail soup.
