Default OT - The dangers of cooking

At first, when I read the headline, I kind of snickered, then I read the
article and saw the pictures, I was "OMG!!!" Mom used to have a pressure
cooker just like that one, and the aluminum canister that you see overturned
on the stove looks like one from a set that I now have.... one that used to
be Mom's....

I have *always* been afraid of pressure cookers. People try to assure me
they are perfectly safe. Obviously not.

Years ago, my neighbor was very badly injured when her pressure cooker
exploded. They are *supposed* to be safe, but I simply don't *feel* safe
around them and will not use one.

I think the modern ones are much safer. THe one in this pic was definitely
the older type.

My DH has a boilermaker's license. He never lets me can unsupervised.
He is terrified of steam, and says you're supposed to have a license to
operate anything over 15 lbs. of pressure, yet ladies run canners all
the time and don't have them safety-checked. Steam is bad stuff, think
about your hot water heater. If the safety valve quits working, it
could take out half your house when it blows up. That happened at a
school cafeteria here in the 80's. It blew up during lunch and killed
several little kids.

Nothing is *perfectly* safe. A properly used pressure cooker or
canner is *very* safe. I've pressure-canned several thousand
jars in my time and had no mishaps.

What usually leads to trouble (and sounds like what happened in
this case) is an attempt to multitask. No pressure
cooker/canner should ever be left unattended for even half a
minute.

Charlie and I used to argue about pressure cookers. I know they are handy
for cooking thing like dried beans and stew meat. His mom used one a lot.
I'm terrified of them and won't have one in the house. Never been around
one that blew, but I heard enough horror stories as a kid.

Modern pressure cookers have a special valve that will break off if the
pressure gets too high, thus preventing an explosion (but probably
covering your entire kitchen and any hoomins in it in whatever you were
cooking, at a very, very high temperature).

I used to have a pressure canner, basically a large pressure cooker
with a gauge so that you could tell how much pressure had built up.
Rather than having a single-use pressure-relief valve, it had a
spring-loaded valve that would reset itself when the pressure got back
down into normal range. I used it a few times to make apple butter.
Unfortunately, the electric stove I had at the time was an old model
with only a few preset power levels, rather than the continuous
gradient they have now, so I kept having to alternate the knob between
two different levels every couple of minutes to keep the pressure from
going too high or too low.

On one occasion, I got a phone call while canning, and didn't keep a
close enough watch on the pressure gauge. Suddenly, the safety valve
opened, and it sounded like a factory whistle was going off in my
kitchen. I turned the stove all of the way off, then retreated to the
far end of the house until the pressure canner stopped screaming at
me.

Unfortunately, the pressure canner was one of the casualties of my
house fire back in 2002, and I have never gotten around to purchasing
a replacement for it. The original canner was a chance discovery at a
yard sale.
