I make crustless tarts of quiches for breakfast. I usually kind of ad lib
the ingredients but the most recent one was very good.

Mushrooms gruyere cheese and eggs

Heat oven to 325 F
Cook half a pound of mushrooms over fairly high heat in a bit of oil or
butter till the are dry and lightly browned.
Spray 9 inch pie plate with non stick spray.
Grate of finely dice about 5 oz gruyere cheese.
Wisk two eggs and three egg yolks, a tablespoon of mayonnaise, a tablespoon
of flour and a quarter tsp of baking powder.
Put mushrooms into pie plate, sprinkle with some mixed dried herbs or fresh
parsley or whatever seasoning sounds good to you. Maybe some salt and black
pepper and just a bit of red pepper.
Top with most of the cheese then the eggs then sprinkle with the remaining
cheese. Bake till lightly browned and firm in the center, about 30 minutes.

Let cool for 5 minutes or so before cutting into wedges.

(Note the flour isn't low card and isn't necessary but I use just a little
when I'm adding vegetables that I'm afraid are going to make things a little
too watery.)
