This is a marvellous recipe for quiche, by Jeff Smith ('The Frugal
Gourmet')


1 small white onion, chopped
3 Tbs. vegetable oil (I use butter)
1 pkg. (9 oz.) frozen chopped spinach, thawed
1 tsp. salt
1 tsp. dill weed
4-5 oz. Feta cheese, crumbled
4 oz. cottage cheese
3 large eggs, beaten
1 c. half and half
1 (9-inch) deep dish pie shell


Thaw spinach and press in a collander [I use one of those collapsible
collanders] and drain very well. Chop onion and saute in the oil about 5
minutes. Add spinach and continue cooking, stirring often until all
liquid
is gone. Transfer to a mixing bowl and stir in remaining ingredients.
Pour
into unbaked pie crust and bake at 375 degrees farenheit for 30 to 35
minutes or until knife inserted into center comes out clean.

Ooh, ooh, ooh... I've wanted to share this one. I tried it
yesterday, and it is rather yummy.

Crock pot recipe (slow cooker)

2 15 ounce cans whole kernel corn (drained)
1 15 ounce can black beans (rinsed and drained)
1 16 ounce bottle chunky salsa (slightly drained)
6 boneless, skinless, chicken breasts
8 ounce bag shredded cheddar (medium or sharp)

Combine corn, black beans, and 1/4 cup of salsa in slow cooker. Place
chicken over the corn/bean mixture, pour the remainder of the salsa.
Put lid on the crock pot (don't remove the lid until near the end, it
adds 10 to 15 minutes to the cooking time). Cook on high for 3 to 4
hours, or low for 7 to 8 hours. When juices run clear, the chicken is
finished, top with shredded cheese, allow to melt (about 5 minutes).

Easy, tasty, filling.

Oooh, I wish I could eat this! Alas, I'm supposed to avoid corn. Sounds
delicious!

Well, you make it with black beans (can you eat beans?) and two cans
pinto beans (drained and rinsed). Oooh, that sounds good, *I* may
have to try that. I don't eat corn often, but I like it occasionally.

The doc told me corn is too high in fiber. Beans are to be avoided unless
they are very well cooked. So I use canned beans which are already cooked
and then cook them again until they are mush, like refired bean texture.
That sucks. But hey, it's better than surgery.

When I worked at the local Social Services, there was the sweetest
guy
who would come in for his food stamps (back when they were actual
'coupons' in a booklet), when I used to actually issue the stamps,
before becoming the worker to establish eligibility for them.

He always complained that he couldn't get the Alpo beef chunks dog
food. When he had cash, he'd make some rice and mix in the dog
food.
He didn't have a dog, he said it was good. I can't imagine that,
because the smell is horrendous, but he always seemed very healthy.

Dry pet food? I might try that, but not the wet stuff. The smell
is
too bad.

The Beniful wet dog food I buy as treats for Kayla smells as good
as a lot of the food we eat. Costs as much too. I paid over $2.00
for a 10 oz container a few days ago. Yes PETCO is overpriced but
she likes lamb and the cheaper stores don't carry that flavor.

I'd taste it for a job, sure. There is a difference.

One of the clerks at our local pet store snacks on dog cookies at the
register. They are just like regular cookies (biscuits) with less
sugar and less fat. Pretty much like animal crackers.

My youngest niece used to routinely snack on the cats' dry food when she
was little. I don't know if she still does it. She grew up to be a

I'd heard that cat food is designed to give one a healthy coat. :P (I'm
thinking of all those shampoo commercials that stress silky full heads of
hair, and wonder how many models have tried a diet of canned pet food to
assist in that objective.)

I was at the bank yesterday and there was an elderly gentleman asking about
a check he'd gotten in the mail. The teller told him the check was written
against a bank that didn't exist. It was one of those banking fraud things
where they try to tell you you've won a lottery (you never entered) and all
you have to do is cash the check and send them some money back. I guess
then they have information about your bank account and clean you out. How
sad is this? At least this man thought to ask about this check rather than
just deposit it. And the teller knew there was something wrong with the
check.

I can't eat corn either, it might work without corn. Carrots would add
sweetness to replace the sweet note from corn.. Do you brown the
chicken first?

human. Could you imagine a human breaking a promise like that to a
beloved? Not anyone really worthy of being called a human. But then
again, Guillaume just made the whole thing up, so what does it
matter.


My thoughts exactly! (Ordinarily I would not wish AIDS on anyone, but
in this guy's case I make an exception.)

Back in the hippy era, I remember seeing someone sitting on a bus-stop
bench with a fork and an open can of dog food. Except for possible
ground bone in the ingredients (which would make cat food a better
choice for human consumption) it didn't seem all that unacceptable an
idea. ((Pet food is probably more closely regulated than canned
products intended for humans.)
