OT: What is triple smoked ham (mentioned on the flickr page)?


Triple smoked ham is what it says it is. Ham that has been smoked
three times. Has more 'smoke' taste than double smoked, single
smoked or unsmoked ham. :-)

You mean to tell me that American ham isn't usually smoked? ZOMG!
That isn't ham, thats just pickled pork!. LOL.


Oh we smoke it. My grandfather was famous for the hams he used to
hang in his smokehouse. You would love Smithfield ham. Just never
heard it referred to as double of triple smoked.

Now the pickled beetroot I think I know what it is, but don't know of
anyone here that would put it on a sandwich. Beets in general aren't
very popular.

A shame because I just love beet greens and can hardly ever find them.

Thanks, Yowie. I guess my question wasn't worded well, but you answered
what I really wanted to know -- that is, what the purpose is of smoking
three times vs. once or twice. We do have fresh ham and smoked ham (also
smoked turkey, etc.), and some smoked products will be known by the type of
wood (such as mesquite) or added flavoring (such as honey) used; but I have
never heard of double smoked or triple smoked.

We've home-cured and smoked hams before. After about 2 to 3 hours, no more
smoke flavor penetrates the meat, to be honest. But, maybe this is an
entirely different method. I'm going to have to look into it - we've got so
much cured, but unsmoked pork in our side freezer.

What Brits and Aussies call beetroot, we just call beets. And they're

Not the same, just look a lot alike.

It is too hot where we live now to grow most root vegetables
successfully. The beet greens I grew up on were the tops of young
beets, usually when my Grandmother thinned the beets. But they are
available at produce stands where the weather is milder.

We have smoked ham, but here they talk about the wood its smoked with
not how many times.

Of course, some ham in the U.S. merely contains smoke flavoring, I think
- it is "cured", but not actually SMOKED (meaning hung in a "smoke
house" to absorb smoke from a genuine fire of some particular wood). I
suspect "Black Forest" ham might be the same as triple-smoked - it seems
to be super-smoky in flavour, like the genuine article by that name from
Europe.

My mother used beet juice to make pickled eggs. I love them, but it seems
to be an acquired taste -- a lot of people don't like them.
